Our Classic series includes single varietal wines sourced from both our vineyards located on our westside property on the other side of the hill at the winery, as well as our second vineyard on the east side of Paso Robles near San Miguel.
Our vineyards are sustainably farmed and our wines are sustainably produced!
This vintage is of our Grenache is showing bold cherry, cranberry, and blackberry, with hints of dark chocolate and baking spice. Pair this with a pulled pork or roast beef dish, delish!

Double Gold - 2021 Orange County Commercial Wine Competition
This wine is rich and lengthy, medium plus bodied, full of stewed cherries and plumb, with essence of spices and herbs that perfume the nose. Great pairing with long roasted meat dishes like lamb or wine boar and roasted rosemary potatoes.

Aromas of Bing cherries and dried cranberries waft out of the glass with a beautiful smokiness that comes across on the palate. Earthy notes are followed up with hints of vanilla and clove.
Our 2019 Mourvèdre offers a bouquet rich in dark fruit, complemented by hints of earth and dried herbs. On the palate, flavors of ripe berries are balanced by savory elements, showcasing integrated tannins and a lingering finish with a touch of spice.

Always a beautiful pour from the bottle our Petite Sirah is dark and rich with large amounts of black fruits, chocolate and peppery notes.

This Zinfandel is deep garnet red in the glass. It has ripe black and red raspberry notes in the nose and the texture is rich and full of mocha, briar and fresh cut meadow.
Our 2020 Cabernet Sauvignon is very approachable and righ with flavors of red fruits. It has smooth tannins and a hint of mocha on the finish.
This vintage of our Grenache is showing more bold blue and red berries and plum. It has pretty aromatics and is a little lighter in body compared to the 2018 and 2019.
Showing off its dark briary fruit, the 2020 Petit Verdot has notes of baking spice and cedar plank. Over the top with plum and blackberry flavors with tannin that will continue to smooth in the coming years.
This dry farmed Zinfandel has a keen balance of fruit and spice and is loaded with flavors. Aromas of cedar and light pepper are properly balanced by big raspberry and blackberry flavors and delicate acidity.

Introducing Shale Oaks first take on Pinot Noir! This wine unveils a captivating bouquet of ripe cherries and delicate floral aromas. An elegant mouthfeel intertwines with red currants, blackberries and earthy spices.
Aromatics of ripe dark fruits and subtle baking spices carry over from the nose to the mouth. This Syrah is medium bodied with a delightful acid balance.
This classic Paso Robles Zinfandel opens with aromas of ripe black fruits and a touch of licorice. The wine is dry and well-balanced, offering rich, ripe, fruite flavors supported by dry tannins.

This silky Mourvèdre is showing off with plumb, blueberry pie, earth tones & dried fruit. The palate reflects dried flowers, herbs, slight minerality, & a smooth finish. It perfectly pairs with Fall dishes & turkey dinners.

Our 2022 Zinfandel has aromas of cranberry, cherry, strawberry, olallieberry, baking spices, & vanilla. The palate is very smooth and fruit forward. Pair this with olallieberry pie this season. Delish!

Our Rosé of Grenache displays a beautiful salmon hue, with delicate aromas of lemon and grapefruit on the nose. On the palate, vibrant acidity and crisp minerality are complemented by lively citrus flavors that keep this wine bright and refreshing.

A complex nose of black cherry, clove and dark chocolate is matched by a mouthful of black fruits, subtle baking spice and well integrated oak. The lingering pallete finshes silky smooth with a beautiful tannin prescense.
